Hold down the shift key and then make the adjustment to the slider. Then let go of the slider before letting go of the shift key. With the current instrument UI, the slider will jump back up to the closest position spacing, but the instrument tuning will save to the "cent" as you called it, or the pitch in between the pitches. Give it a try and see if it works for you.
