how do i detune or change the volume of only one single note and not the entire instrument?

To change volume of an individual note or group of notes first select the note(s). Then hold down alt and either use the mouse scroll or press + (louder) or - (quieter).

To change the pitch (detune) a single note you will need to use markers, however the markers affect the whole instrument so you can only detune a single note if it is the only note (of that instrument) playing at that time. Set a new marker in the marker bar above the grid. Then in the marker dialogue, select the option select instrument detune from the first drop down and the instrument that you want to detune in the second drop down. Then hit the big plus sign and move the slider to pitch the instrument. To set the pitch back, make another marker when the note is over, set it to detune and the same instrument and hit the reset button.

If you want to actually make a pitch bend audible (like bending a guitar string) then put a marker at the spot where the bend should begin and another where the bend should end. Set the pitch for the beginning and end appropriately (one of them likely at neutral 0) and click the blend toggle on the second marker. You may need a third marker to reset the pitch afterwards depending on your needs.
