Would it be possible to allow users to upload their own soundfonts to use for songs? I know that piano rhythm did it and it works pretty well but it would be nice because there are certain sounds i'd like to use that i can't

No, copyright is a huge problem. If you need your own instruments, use a DAW like Ardour, Reaper, or Cakewalk, and go get some VST plugins
